No VAT number, can't create an invoice for any customer now, because customers do not have a VAT number and you have to fill it in.

This normally works in Optios. You first go to the checkout, put everything from services or products into an account. Then you use the payment method “bank transfer”. Then choose 'create invoice'. You can complete the data and leave VAT open in this case. The invoice is also set to unpaid until you change this status.
